  • Peanuts have many value-added products, which have been developed for several applications in the bakery, confectionery, and the general consumer market. Important peanut products are roasted and fried peanuts as snacks, peanut oil, butter and flour, and peanut protein concentrate and isolate.

  • Over the past several decades trait-modified peanut oils (high oleic acid) have been developed. Commercialization will improve peanut oil in both food and industrial applications.
